The correct answer to yesterday’s question was ‘Mulled Wine’.
According to Chemistry PhD student Laura, the trick is starting out by heating up only a little wine with your sugar – the temperature the mix needs to reach to extract the oils from the spices is 79 degrees, but this is also a temperature the alcohol will evaporate at. Adding the majority of your wine once the oils have been extracted from the spices will give you that perfect mulled wine flavour! Discover more #UoSfestive treats here.
